Korean Sweet Corn Latte

This comforting and unique drink is perfect for both hot and cold weather, offering a delightful blend of sweet and creamy flavors with the natural taste of corn!

Ingredients:


2 cups (400g) fresh or canned sweet corn kernels

2 cups (480ml) milk (dairy or plant-based)

2 tablespoons sweetened condensed milk

1 teaspoon vanilla extract

2 tablespoons honey or sugar (adjust to taste)

1/2 teaspoon ground cinnamon (optional)

Ice cubes (optional, if serving cold)

Directions:


1. Prepare the Corn:

If using fresh corn, cut the kernels off the cob. If using canned corn, drain and rinse the kernels.

2. Blend the Corn:

In a blender, combine the corn kernels and milk. Blend until smooth. Depending on your blender, this may take 1-2 minutes.

3. Strain the Mixture:

Pour the blended mixture through a fine-mesh sieve or cheesecloth into a saucepan to remove any solid bits of corn. Use the back of a spoon to press the liquid through if necessary.

4. Heat the Mixture:

Place the saucepan over medium heat. Add the sweetened condensed milk, vanilla extract, and honey or sugar. Stir continuously until the mixture is heated through but not boiling. Taste and adjust the sweetness if necessary.

5. Optional Cold Version:

If you prefer a cold latte, let the mixture cool to room temperature, then refrigerate until chilled. Serve over ice cubes.

6. Serve:

Pour the sweet corn latte into mugs or glasses. Sprinkle a little ground cinnamon on top if desired.

7. Enjoy:
