Directions:
1. Prep the Corn: Carefully cut each ear of corn into quarters lengthwise to create “ribs.” This can be done by slicing through the cob with a sharp knife—be cautious as the cob is tough!
2. Season the Corn:
In a bowl, mix olive oil, Cajun seasoning, salt, pepper, honey or maple syrup, and smoked paprika (if your looking for a bit of smokiness). Toss the corn ribs in the mixture until they are evenly coated.
3. Air Fry the Corn Ribs: Preheat your air fryer to 400°F (200°C). Arrange the seasoned corn ribs in a single layer in the air fryer basket (you may need to cook in batches depending on the size of your air fryer). Cook for 10-12 minutes, flipping halfway through, until the corn is golden brown and slightly charred.
4. Add Cheese and Lime: Remove the corn ribs from the air fryer and immediately sprinkle them with grated Parmigiano cheese. Drizzle with lime juice for an extra burst of flavor.
5. Garnish and Serve: Finish with a sprinkle of freshly chopped cilantro. Serve hot as a delicious and easy appetizer or side dish!
