Air Fryer Sweet and Spicy Corn Ribs

Ingredients:

4 ears of corn, husked
2 tablespoons olive oil
1 tablespoon Cajun seasoning
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon smoked paprika (optional, for extra smokiness)
1 tablespoon lime juice
2 tablespoons freshly grated Parmigiano cheese
Chopped fresh cilantro, for garnish

Directions: 
1. Prep the Corn: Carefully cut each ear of corn into quarters lengthwise to create “ribs.” This can be done by slicing through the cob with a sharp knife—be cautious as the cob is tough!
2. Season the Corn: In a bowl, mix olive oil, Cajun seasoning, salt, pepper, honey or maple syrup, and smoked paprika (if using). Toss the corn ribs in the mixture until they are evenly coated.
3. Air Fry the Corn Ribs: Preheat your air fryer to 400°F (200°C). Arrange the seasoned corn ribs in a single layer in the air fryer basket (you may need to cook in batches depending on the size of your air fryer). Cook for 10-12 minutes, flipping halfway through, until the corn is golden brown and slightly charred.
4. Add Cheese and Lime: Remove the corn ribs from the air fryer and immediately sprinkle them with grated Parmigiano cheese. Drizzle with lime juice for an extra burst of flavor.
5. Garnish and Serve: Finish with a sprinkle of freshly chopped cilantro. Serve hot as a delicious and easy appetizer or side dish!
