Preheat the Oven: Set your oven to 200°F (93°C). This low temperature is key to gently dehydrating the strawberries without cooking them.

Prepare the Strawberries:

Rinse the strawberries under cold water and pat them dry with paper towels. Remove the green tops and hull them. Slice the strawberries uniformly, about 1/4 inch thick, to ensure even drying.

Arrange the Strawberries:

Line a baking sheet with parchment paper. Lay the strawberry slices in a single layer on the sheet, making sure they don't overlap.

Begin the Drying Process:

Place the strawberries in the preheated oven. Let them dry for about 1.5 to 2 hours max. The goal is not to fully dehydrate them but to reduce some of their moisture content.

Check Consistency:

After 1.5 hours, start checking the strawberries every 15 minutes. You’re aiming for a texture that’s chewier and more concentrated in flavor than fresh strawberries, but still with some moisture and juiciness inside.

Cool and Enjoy:

Once they've reached the desired texture, take them out of the oven. Allow them to cool on the baking sheet. They may continue to dry slightly as they cool. Store any leftovers in an airtight container in the fridge.
