Cast Iron Pizza

This crispy bottom Pizza makes me do a double take.

Ingredients

Crust
  • 2 cups (240g) King Arthur Unbleached All-Purpose Flour
  • 3/4 teaspoon salt
  • 1/2 teaspoon instant yeast or active dry yeast
  • 3/4 cup (170g) lukewarm water
  • 1 tablespoon (13g) olive oil + 1 1/2 tablespoons (18g) olive oil for the pan
Toppings
  • 6 ounces (170g) mozzarella, grated (about 1 1/4 cups, loosely packed)
  • 1/3 to 1/2 cup (74g to 113g) tomato sauce or pizza sauce, homemade or store-bought
  • Freshly grated hard cheese (e.g., Parmesan, Asiago, Romano) - optional
  • Fresh herbs (oregano, basil, thyme) - optional

Directions

Prepare the Dough:

  1. In a mixing bowl, combine flour, salt, and yeast. Add lukewarm water and 1 tablespoon olive oil. Mix until a shaggy dough forms.
  2. Knead the dough in the bowl for a few minutes until it becomes smooth.
  3. Cover the bowl with a kitchen towel or plastic wrap. Let the dough rise at room temperature for 2 hours, or until it doubles in size.

Preheat the Oven and Skillet:

  1. Place the cast iron skillet in the oven. Preheat the oven to 500°F (260°C) with the skillet inside for at least 30 minutes.

Shape the Dough:

  1. Once the dough has risen, drizzle the remaining 1 1/2 tablespoons of olive oil into the skillet.
  2. Carefully remove the skillet from the oven (it will be very hot) and transfer the dough into it. Spread the dough evenly with your fingers, pushing it up the sides of the skillet.

Add Toppings:

  1. Spread the tomato sauce over the dough. Sprinkle the grated mozzarella evenly on top.
  2. Optional: Add any additional toppings of your choice.

Bake the Pizza:

  1. Bake the pizza in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is bubbly.
  2. Optional: In the last minute of baking, you can broil the pizza to get a more browned and bubbly top.

Finishing Touches:

  1. Remove the pizza from the oven. Sprinkle with freshly grated hard cheese and fresh herbs, if using.
  2. Let the pizza cool for a few minutes before slicing and serving.

Storage Information:

  • Refrigeration: Store any leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheating: Reheat slices in a preheated oven at 350°F (175°C) for about 5-10 minutes, or until heated through. You can also reheat in a skillet over medium heat for a crispier crust.
