Cast Iron Egg Frittata

Using fridge scraps is what makes making a frittata so much fun and eco-friendly. It's the perfect dish for a "clean out the fridge" day.

Ingredients:

  • 8 large eggs
  • 1/2 cup milk (any kind you prefer)
  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite mix)
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers (any color you like)
  • 1 cup spinach leaves, roughly chopped
  • 1/2 cup cooked and crumbled bacon or sausage (optional for a vegetarian version, just skip it)
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Directions:

  1. Preheat your oven to 400°F (200°C), so it's ready to go once your frittata mixture is prepared.
  2. Sauté the veggies: Heat the olive oil in your cast iron skillet over medium heat. Add the diced onions and bell peppers, sautéing until they're soft and slightly caramelized, about 5 minutes. If you're using spinach, add it last and cook until just wilted, usually about 1-2 minutes.
  3. Add your meat: If you're including bacon or sausage, now's the time to stir it in, ensuring it's evenly distributed with the veggies.
  4. Whisk the eggs and milk: In a large bowl, beat the eggs with the milk until fully combined. Season with salt and pepper to taste. Stir in the shredded cheese.
  5. Combine: Pour the egg mixture over the sautéed veggies (and meat, if using) in the skillet. Give it a gentle stir to make sure everything is evenly mixed.
  6. Cook on the stove: Let it cook on medium heat for about 4-5 minutes, or until you see the edges start to set.
  7. Bake: Transfer the skillet to the preheated oven. Bake for 10-15 minutes, or until the frittata is set and the top is slightly golden. You can check doneness by inserting a knife in the center; if it comes out clean, it's ready.
  8. Serve: Let it cool for a few minutes, then slice and serve directly from the skillet. A side salad or some crusty bread makes a great addition!
