Browned Butter Ice Cream Brownie Sandwich

Well that title is a mouthful

For the Brownies:

  • 1 cup (2 sticks) unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1/2 teaspoon salt

For the Ice Cream:

  • Your favorite flavor of ice cream (vanilla, chocolate, or any other flavor you prefer)

For Assembly:

  • Sprinkles or chopped nuts (optional, for rolling the edges of the sandwiches)

Instructions:

1. Prepare the Browned Butter:

  • In a saucepan, melt the butter over medium heat.
  • Once melted, continue cooking, stirring frequently, until the butter turns golden brown and develops a nutty aroma, about 5-7 minutes.
  • Remove from heat and transfer to a heatproof bowl to cool.

2. Make the Brownies:

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  • In a large mixing bowl, cream together the browned butter and sugar until well combined.
  • Beat in the eggs, one at a time, then stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, cocoa powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Pour the batter into the prepared baking pan and spread it out evenly.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  • Allow the brownies to cool completely in the pan before cutting into squares.

3. Assemble the Sandwiches:

  • Once the brownies are completely cooled, scoop a generous amount of ice cream onto the bottom of one brownie square.
  • Top with another brownie square to create a sandwich.
  • If desired, roll the edges of the sandwich in sprinkles or chopped nuts for extra flair.
  • Repeat with the remaining brownie squares and ice cream.
  • Serve immediately, or wrap each sandwich individually in plastic wrap and freeze for later enjoyment.
